Cameras - No idea but why would you ?
Autolock - No - but right next to your right hand there's a button you can press.
S/S - No - I'm absolutely baffled by people who don't like this feature but each to their own. However, just below your right hand there's a button you can press to disable it once you've started the engine

My dinosaur view:
Where S/S cannot as an option be permanently disabled is indeed a curse. Its presence on cars is really a safety issue and should have been eliminated on system requirements review. There exists a probability that an engine could be unexpectedly cut at road speed. Its been classed low and perhaps mitigation exists...just guessing?
I don't know exactly what the components are for this function other than they ultimately operate as the main S/S press button. However, there exists added logic that requires a number of conditions (states) to be monitored that determine whether the engine should be cut or not.

I just like to be able to change stuff,
I am aware of the buttons to stop these but on my bmw you can code stuff in and out on and of, I just thought Nissan qashqai you could do similar stuff,
I guess it's just everyone to there own,

I've never had a car which locks the doors, so don't know what (or whether) I'm missing.

On my last QQ I had a unit which plugged into the OBD socket, and this locked the doors when a certain speed was reached.
I have tried to train myself to switch off the start/stop.
The plug-in unit mentioned above I got from China, possibly Ali Express.
July 2019. QQ 1.3 Petrol in white with safety pack.
Previous QQs, 2010 and 2014 1.5 dci.

Welcome to this forum
Anyway no one has even attempted to modify it for the functionality you require.
calnorth - I'm also baffled by people saying it's a safety issue and could cut out when going along. The system in my present car works almost all the time (it needs about 100m travel before operating) and it has NEVER stopped the engine when I wasn't expecting it. In fact the Suzuki system is superior to the Qashqai one in (a) stopping the engine BEFORE you get to a halt - it just needs to be below 10mph and the brakes have never been an issue, (b) being adjustable to three settings depending on how much you want the AC to keep working - I have it set to economy and when stopped the fan speed reduces to save battery, and (c) better integration with the engine - the car literally just starts when you depress the clutch without any jerking or delay.
Coco31 - persevere - assuming it's actually working on your car, once you get used to it you'll love it!
I too don't see why you'd want these on ALL the time - you'd see very little at 60mph. I could see a reason for having the reverse camera on all the time to keep a check on the closeness of vehicles behind in traffic queues.

I believe there are some plug-ins available but in all honesty it's pretty simple to just hit the door button. Note however that the boot DOES autlock - in the context of the button on the hatch being disabled.
Like MikeJC I'm also absolutely baffled by people who don't like this feature. The fact mine hardly ever worked was one of the reasons for selling my car. I'd often turned the engine off at traffic lights with my previous two cars (both Fabia vRS). I battled the Nissan dealer but despite a new battery the situation didn't improve. Stop/start would only start operating after driving a long way. I called it the "out of county S/S" - and of course that's useless in normal trips into town. I'm fully convinced that the electronic systems weren't charging the battery properly but the dealer refused to accept it as being faulty.
